Praliné 60% with Almonds from Provence
To make this praline unique taste, we spoke to one of the precursors, Hervé Lauzier. Among its 7 varieties of almonds cultivated in a reasoned way, we opted for « MANDALINE ». Its aromatic characteristics are exceptional: at the same time powerful but with a lot of roundness. Thanks to a fairly strong roasting, we obtain a praline with slightly acidic spicy notes. These taste qualities make it possible to offer a 60% praline that highlights the taste of the fruit while associating perfectly with other raw materials.
