Easter is an important season for all chocolate makers because you have to combine innovation with profitability. Our consultant Fabien Deal has many ideas in this area. He proposed the theme of “Protecting the planet” which has been approached using home-made moulds that can be adapted to suit all creations with plastic chocolate. As a response to the trend for “eating well” and to cope with allergy issues, our trainees were also able to try gluten-free pastry: cakes and cannelés made with wholegrain rice flour… Less allergens but just as tasty!
