But Olivier de Loisy®, collector and discoverer of rare cocoa beans, was not travelling to conquered lands… In the world of cocoa bean planters and producers, ancestral knowledge combines tried and tested methods and a good dose of instinct.

The knowledge of bean growers (from plantation to harvest and drying) is impalpable, quasi-mysterious, unquantifiable, to be approached with respect and humility.

The aim, for Chocolaterie de l’Opéra®, is not to teach local producers their craft but to unearth the gem that has unsuspected aromatic richness.
