When I opened the CJSJ patisserie in Taiwan, I wanted to recreate a world I love. The world of childhood and mangas but with understated elegance. Style and substance have to be true to my vision which is why I use Opéra chocolate. It has a beautifully balanced flavour signature with punchy aromas.  My favourite is the Vibrato chocolate.  Its fresh fruit notes with a slightly bitter finish make it totally unique. It stands out for my Taiwan clients who appreciate its subtleties. The Pures Plantations range is a game-changer in terms of both flavours and technical features. The same composition means you can change origin without having to change the recipe. I use the cocoa powder (22/24) a lot because the colour is ideal for glazes, biscuits and travel cakes.

Last but not least, what I like about the brand is its personal touch and customer service, which are essential especially when you're based abroad.
